📝 Instructions

12 steps
1

Boil 4 eggs for 7-8 minutes until hard-boiled. Let them cool, peel the shells, and set them aside.

2

Finely chop 2 medium onions and 2 medium tomatoes. Slit the 2 green chilies lengthwise.

3

Heat 2 tablespoons of cooking oil in a pan over medium heat. Add 0.5 teaspoon cumin seeds and let them crackle.

4

Add the chopped onions and sauté until they turn golden brown.

5

Stir in 1 tablespoon of ginger-garlic paste and cook for 1-2 minutes until the raw smell disappears.

6

Add the chopped tomatoes and green chilies. Cook until the tomatoes turn soft and mushy, about 5-7 minutes.

7

Mix in 0.5 teaspoon turmeric powder, 1 teaspoon red chili powder, 1 teaspoon coriander powder, and salt to taste. Stir well to combine.

8

Add 1 cup of milk and stir continuously to avoid curdling. Bring the mixture to a gentle simmer.

9

Stir in 4 tablespoons of fresh cream and 1 teaspoon of kasuri methi (crushed between your palms). Cook for 2-3 minutes to blend the flavors.

10

Make gentle slits on the boiled eggs to allow the masala to seep in. Add the eggs to the curry and coat them with the sauce.

11

Sprinkle 0.5 teaspoon of garam masala over the dish and cook for another 2 minutes.

12

Garnish with freshly chopped coriander and serve hot with naan, roti, or steamed rice.
