Preheat the oven to 375°F (190°C).
Peel the russet potatoes and slice them thinly into rounds. Set aside.
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Season the pork chops with salt and pepper, then sear them for 2-3 minutes on each side until browned. Remove the pork chops and set aside.
