Heat a large skillet over medium-high heat. Add the ground pork and cook until browned, breaking it up with a spoon, about 6-8 minutes. Drain any excess fat.

Add the shredded cabbage, shredded carrots, green onions, soy sauce, sesame oil, garlic, and ginger to the skillet. Cook for 3-4 minutes until the vegetables are softened. Remove from heat and let the filling cool slightly.

Lay an egg roll wrapper on a clean, flat surface with one corner pointing toward you, making a diamond shape.

Spoon about 2-3 tablespoons of the filling mixture into the center of the wrapper. Fold the bottom corner over the filling, then fold in the two side corners. Roll tightly toward the top corner to form an egg roll shape. Seal the edge with a light brush of beaten egg.
