πŸ“ Instructions

11 steps
1

Preheat your oven to 190Β°C (375Β°F) or 170Β°C (fan). Line two baking trays with parchment paper.

2

In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy using a hand or stand mixer.

3

Add the egg yolk to the mixture and continue to beat until well combined.

4

Sift the all-purpose flour, mixed spice, and ground cinnamon into the bowl. Mix until the ingredients are just combined.

5

Stir in the currants and gradually add the milk, one tablespoon at a time, until the dough comes together. The dough should be soft but not sticky.

6

Lightly flour your work surface and roll out the dough to about 5mm (1/4 inch) thick using a rolling pin.

7

Using a 7cm (3-inch) round cookie cutter, cut out the biscuits and place them onto the prepared baking trays. Re-roll the dough scraps and repeat until it’s all used.

8

Sprinkle the tops of the biscuits generously with caster sugar.

9

Bake in the preheated oven for 12-15 minutes or until the biscuits are lightly golden around the edges.

10

Remove the trays from the oven and allow the biscuits to cool on the trays for 5 minutes before transferring them to a wire rack to cool completely.

11

Serve and enjoy the biscuits plain or with a cup of tea. These can be stored in an airtight container for up to 5 days.
