1. In a medium saucepan, combine coconut cream, maple syrup, and vanilla extract. Stir in the cornstarch until fully dissolved.

2. Place the saucepan over medium heat and cook, stirring constantly, until the mixture begins to thicken. Remove from heat and allow the mixture to cool completely, then transfer it to a freezer-safe container and freeze for at least 4 hours, or until solid.

3. Melt the non-dairy dark chocolate and coconut oil together in a heatproof bowl over a pan of simmering water, stirring until smooth. Once melted, remove from heat.
