Preheat your oven to 400°F (200°C).
Slice each chicken breast in half horizontally to create 4 thin cutlets. Season both sides with salt, black pepper, and garlic powder.
In a shallow dish, mix the bread crumbs and nutritional yeast together.
In another shallow dish, beat the eggs.
Dip each chicken cutlet into the beaten eggs, allowing any excess to drip off, then coat with the breadcrumb mixture, pressing the crumbs onto the chicken to adhere.
Heat olive oil in a large skillet over medium-high heat. Add the breaded chicken cutlets to the skillet and cook for 3-4 minutes on each side, or until golden brown. You may need to cook them in batches.
Meanwhile, warm the marinara sauce in a saucepan over low heat.
Place the cooked chicken cutlets on a baking sheet. Spoon about 2 tablespoons of marinara sauce on top of each cutlet, then sprinkle with dairy-free mozzarella cheese.
Bake in the preheated oven for 10 minutes, or until the cheese is melted and bubbly.
While the chicken is baking, slice the sub rolls lengthwise, but not all the way through, forming a pocket.
Once the chicken is done, place one cutlet in each sub roll. Add a couple of fresh basil leaves to each sandwich.
Serve immediately and enjoy your Dairy-Free Chicken Parmesan Sub.
