Slice each bagel in half and set aside.
In a medium skillet, heat 1 tablespoon of coconut oil or olive oil over medium heat.
Add the vegan bacon strips to the skillet and cook for about 2-3 minutes per side or until they are crispy and golden brown. Remove from the skillet and set aside.
While the bacon is cooking, prepare the avocado spread. In a bowl, scoop out the flesh of the avocado and mash it with a fork.
Add 1 teaspoon of lemon juice, 0.5 teaspoon of salt, and 0.25 teaspoon of black pepper to the mashed avocado and mix until smooth and well combined. Adjust seasoning if needed.
Toast the bagel halves in a toaster or under a broiler until they are golden brown.
Spread a generous amount of the avocado mixture on each toasted bagel half.
Layer 2 large romaine lettuce leaves and 2-3 tomato slices on top of the avocado on the bottom half of each bagel.
Place 2 pieces of the cooked vegan bacon on top of the tomatoes.
Finish by placing the top half of the bagel on each sandwich.
Serve immediately and enjoy your delicious Dairy-Free BLT Bagel!
