Delight your taste buds with the timeless charm of Czech Kolacky, a traditional pastry that combines pillowy soft dough with the vibrant sweetness of fruit preserves. Made from a rich blend of butter, cream cheese, and egg yolks, the dough is tender and buttery, providing the perfect base for your favorite jams, whether itβs tangy apricot, luscious raspberry, or another fruity delight. These beautiful cookies are gently shaped with a thumbprint and baked to golden perfection, then topped with a delicate dusting of powdered sugar for a touch of elegance. Ready in under an hour and ideal for sharing, Kolacky are perfect for holiday gatherings, afternoon tea, or anytime you crave an authentic European pastry experience.
In a large mixing bowl, combine the softened butter and cream cheese until creamy and well blended.
Add the egg yolks, granulated sugar, and vanilla extract to the butter mixture, and mix until smooth.
Gradually add the flour to the mixture, stirring until a soft dough forms. Be careful not to overmix.
Divide the dough into two portions, wrap each in plastic wrap, and refrigerate for at least 1 hour or until firm.
Preheat the oven to 375Β°F (190Β°C) and line baking sheets with parchment paper.
On a lightly floured surface, roll out one portion of the dough to about 1/4-inch thickness. Keep the remaining dough in the refrigerator until ready to use.
Use a round cookie cutter (about 2 inches in diameter) to cut out circles from the dough. Transfer the circles to the prepared baking sheets, spacing them about 1 inch apart.
Using your thumb or the back of a spoon, make an indent in the center of each circle. Be careful not to press all the way through.
Fill each indent with about 1/2 teaspoon of your chosen jam or preserves.
Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
Remove the kolacky from the oven and let them cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
Once the pastries are fully cooled, dust them lightly with powdered sugar before serving.
