Peel and chop the potatoes into 1-inch chunks. Peel and slice the carrots into rounds. Seed and slice the red bell pepper, and roughly chop the onion. Mince the garlic cloves.
Heat the olive oil in a skillet over medium heat. Brown the Italian sausage links for about 2-3 minutes per side, until golden. Do not cook them all the way through.
In the bottom of a 6-quart crock pot, add the potatoes, carrots, onion, and red bell pepper, layering evenly.
Place the browned sausage links on top of the vegetables.
In a medium bowl, mix together the diced tomatoes, tomato sauce, minced garlic, Italian seasoning, salt, and black pepper. Pour this mixture evenly over the sausage and vegetables in the crock pot.
