Rinse the Cornish game hens under cold running water and pat them dry with paper towels. Remove any giblets and discard, if included.

Peel and mince two garlic cloves, and slice the other two cloves in half. Set aside.

Rub the outside of each game hen with olive oil. Season generously all over, including inside the cavity, with salt, pepper, and paprika.

Cut the lemon into quarters. Stuff each game hen cavity with two lemon wedges, one rosemary sprig, and two halved garlic cloves.

Peel the carrots and cut them into large chunks. Peel and quarter the potatoes. Slice the onion into wedges. Place all the vegetables into the bottom of your crock pot.

Pour the chicken broth over the vegetables. Add the remaining two rosemary sprigs on top.

Nestle the prepared game hens over the vegetables in the crock pot, breast side up.
