Delightfully light and irresistibly crisp, these Crispy Baked Meringues are a showcase of sweet simplicity and culinary precision. Made with just a handful of pantry staples—fluffy whipped egg whites, sugar, and a touch of vanilla—this dessert is perfect for any occasion. The addition of cream of tartar ensures perfectly stiff, glossy peaks, while the low-and-slow baking method locks in the signature crunchy texture. Customize your meringues with playful toppings like sprinkles, cocoa powder, or chocolate chips for a personal touch. With minimal prep time and an elegant result, these melt-in-your-mouth meringues are as beautiful as they are delicious, perfect for holiday platters, afternoon teas, or guilt-free snacking.
Preheat your oven to 225°F (110°C) and line two baking sheets with parchment paper.
Make sure your mixing bowl and beaters are completely clean and dry. Any grease or residue will prevent the egg whites from whipping properly.
In the clean mixing bowl, add the egg whites, cream of tartar, and salt. Using a hand or stand mixer, beat the mixture on medium speed until it becomes frothy.
Gradually add the granulated sugar, 1 tablespoon at a time, while continuing to beat the mixture. Once all the sugar is incorporated, increase the speed to high and beat until stiff, glossy peaks form. This can take 5–7 minutes.
Gently fold in the vanilla extract, being careful not to deflate the meringue.
Using a piping bag fitted with your favorite tip or a spoon, pipe or dollop small mounds of meringue onto the prepared baking sheets, spacing them about 1 inch apart.
If using optional toppings, sprinkle them over the meringues before baking.
Place the baking sheets in the preheated oven and bake for 90 minutes. Do not open the oven door during this time.
After 90 minutes, turn off the oven and let the meringues cool completely inside the oven, about 1 hour. This helps them dry out and achieve their signature crisp texture.
Once cooled, remove the meringues from the baking sheets and store them in an airtight container at room temperature for up to 1 week.
