  • 1 lemon, halved
  • 2 yellow onion, quartered
  • 3 celery stalks, roughly chopped
  • 3 carrots, roughly chopped
  • 2 cups chicken stock
  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper

1. Preheat your oven to 325°F (165°C).

2. Rinse the turkey under cold water, then pat it dry with paper towels. Remove any giblets or neck from the cavity.

3. In a small bowl, mix the softened butter, Creole seasoning, minced garlic, chopped thyme, and parsley together until well combined.

4. Carefully loosen the skin of the turkey breasts by sliding your fingers under it. Spread half of the seasoned butter mixture under the skin. Rub the remaining butter all over the outside of the turkey.

5. Season the cavity with kosher salt and black pepper. Stuff the cavity with the halved lemon, quartered onions, celery, and carrots.

6. Tie the turkey legs together with kitchen twine to ensure even cooking. Tuck the wing tips under the bird to prevent burning.
