A touch of heavy cream and olive oil adds luscious texture, while the optional hint of sugar balances the natural acidity of the tomatoes. Perfect as a satisfying appetizer or a light main course, this recipe is a must-try for busy weeknights, offering homemade comfort with gourmet flair. Garnish with fresh basil or a drizzle of olive oil for an elegant finish that will wow your guests.
Wash the tomatoes and remove the stems. Quarter the tomatoes for easy blending.
Peel and roughly chop the onion and the garlic cloves.
Add the tomatoes, onion, garlic, and chicken or vegetable broth to the VitaMix blender.
Secure the blender lid and start the VitaMix on low speed, gradually increasing to high.
Blend on high speed for 5–6 minutes. The VitaMix's powerful motor will heat the soup as it blends.
Once the soup is steaming hot, reduce the speed to low and slowly add the heavy cream and olive oil through the lid plug opening.
Add salt, black pepper, and sugar (if desired) to taste. Blend on low for another 30 seconds to mix.
Add the fresh basil leaves and pulse the blender a few times to incorporate without over-blending.
Taste and adjust seasoning if needed.
Serve hot, optionally garnished with additional basil leaves, a drizzle of olive oil, or a dollop of cream.
