📝 Instructions

12 steps
1

Fill a large pot with 4 quarts of water, add 1 teaspoon of salt, and bring it to a boil.

2

Cook the penne pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

3

While the pasta is cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat.

4

Add the minced garlic to the skillet and sauté for 1 minute until fragrant.

5

Add the red bell pepper, zucchini, and yellow squash to the skillet. Cook for 4-5 minutes, stirring occasionally, until the vegetables start to soften.

6

Stir in the cherry tomatoes and frozen peas. Cook for another 2-3 minutes until the tomatoes start to blister and the peas are warmed through.

7

Lower the heat to medium-low and pour in the heavy cream. Stir well to combine with the vegetables.

8

Add the grated Parmesan cheese, Italian seasoning, 1/2 teaspoon salt, and 1/2 teaspoon black pepper. Stir until the cheese has melted and the sauce is creamy.

9

Gently toss the cooked pasta into the skillet with the vegetable cream sauce. If the sauce seems too thick, add a splash of reserved pasta water until it reaches your desired consistency.

10

Taste and adjust the seasoning with more salt and pepper if needed.

11

Remove from heat and garnish with freshly chopped basil leaves before serving.

12

Serve warm and enjoy your creamy pasta primavera!
