  • 1 tsp (or to taste) Salt
  • 0.5 tsp (or to taste) Black pepper
  • 2 tbsp (chopped, for garnish) Fresh parsley

Drain the canned hearts of palm and chop them into 1-inch pieces. Set aside.

In a large pot, melt the butter over medium heat. Add the chopped onion and cook for 5-7 minutes, stirring occasionally, until softened and translucent.

Add the minced garlic to the pot and cook for another 1 minute until fragrant.

Using an immersion blender, blend the soup directly in the pot until smooth. Alternatively, transfer the mixture to a countertop blender, working in batches if necessary, and blend until fully puréed. Return the soup to the pot if using a countertop blender.

Stir in the heavy cream and season with salt and black pepper to taste. Simmer for another 5 minutes to warm through, but do not let the soup boil after adding the cream.
