📝 Instructions

8 steps
1

Bring a large pot of salted water to a boil. Cook the spaghetti as per package instructions until al dente. Reserve 1/2 cup of pasta water and drain the rest.

2

While the pasta cooks, use a vegetable peeler to slice the courgettes into thin ribbons. Alternatively, you can julienne them if you prefer.

3

Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant, being careful not to burn it.

4

Add the courgette ribbons to the skillet and cook for 2-3 minutes, tossing occasionally, until slightly softened.

5

Stir in the lemon zest, lemon juice, salt, and black pepper (and chili flakes, if using). Toss to combine.

6

Add the drained spaghetti to the skillet along with a splash of the reserved pasta water. Toss everything together for 1-2 minutes to coat the pasta evenly and to bring the flavors together.

7

Remove the skillet from the heat and sprinkle in the grated Parmesan cheese and torn basil leaves. Toss gently to combine.

8

Serve immediately with extra Parmesan cheese and a grind of black pepper on top if desired.
