Bring a large pot of salted water to a boil. Cook the fettuccine pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set the pasta aside.

Slice the smoked sausage into thin rounds. Peel and dice the yellow onion. Mince the garlic cloves. Remove the seeds and stem from the red bell pepper, then dice it into small pieces.

In a large skillet, heat the olive oil over medium heat. Add the sliced sausage and cook for 4-5 minutes, stirring occasionally, until browned. Remove the sausage from the skillet and set it aside.

Add the cooked fettuccine to the skillet and toss to combine, ensuring the pasta is evenly coated with the sauce. If needed, add a splash of the reserved pasta water to loosen the sauce to your desired consistency.
