Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
In a large mixing bowl, combine the crumbled cornbread and day-old bread.
In a skillet, melt the butter over medium heat. Add the chopped onions and celery, cooking until softened (about 5-7 minutes).
Pour the sautéed onions and celery along with the butter into the bread mixture, mixing well.
Add the beaten eggs, sage, poultry seasoning, salt, pepper, and 4 cups of chicken broth to the bread mixture. Stir until fully combined and the mixture is moist but not soupy. If it is too dry, add more chicken broth, 1/4 cup at a time.
