Cut the chicken breast into bite-sized cubes and set aside.
Finely chop the fresh coriander (reserve a small portion for garnish). Mince the garlic and finely chop the onion.
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chicken cubes and season with salt and black pepper. Sear the chicken for 5-6 minutes until golden brown on all sides. Remove the chicken from the pan and set aside.
In the same skillet, add the remaining 1 tablespoon of olive oil. SautΓ© the chopped onion until soft and translucent, about 3-4 minutes. Add the minced garlic and cook for another 30 seconds, stirring constantly to prevent burning.
Stir in the ground coriander, cumin powder, paprika, and red chili flakes (if using). Toast the spices for 1 minute to release their aroma.
Add the seared chicken back into the pan. Stir well to coat it with the spices.
Pour in 1 cup of chicken stock and reduce the heat to low. Cover the skillet and let the chicken simmer for 10 minutes, allowing the flavors to meld.
While the chicken cooks, prepare the couscous. In a medium-sized bowl, add the couscous and a pinch of salt. Pour 1/2 cup of boiling chicken stock over the couscous, cover the bowl with a plate or lid, and let it sit for 5 minutes. Afterward, fluff the couscous with a fork.
Once the chicken is cooked through, stir in the chopped fresh coriander and lemon juice. Allow it to cook for an additional 1-2 minutes.
To serve, divide the couscous among four plates and spoon the coriander chicken mixture on top. Garnish with the reserved fresh coriander.
Serve warm and enjoy your Coriander Chicken Couscous!
