In a small skillet, toast the coriander seeds over medium heat for 2–3 minutes until aromatic. Remove from heat and lightly crush the seeds using a mortar and pestle or the back of a spoon.

In a medium saucepan, combine water, crushed coriander seeds, and honey. Bring to a gentle simmer over medium heat and cook for 5 minutes. Remove from heat and let the mixture steep for 15 minutes.

Strain the liquid through a fine mesh sieve or cheesecloth into a clean saucepan, discarding the solids.

Stir in the granulated sugar and lemon juice. Bring the mixture to a boil over medium-high heat, stirring frequently.

Sprinkle the powdered pectin evenly over the boiling liquid while whisking continuously to ensure no lumps form. Continue to boil for 1–2 minutes or until the mixture thickens slightly.
