Preheat your oven to 400°F (200°C). Line two baking sheets with parchment paper.

Lightly flour a work surface, then unfold the puff pastry sheets. Roll each sheet out slightly to smooth the folds and thin the pastry.

Using a pizza cutter or sharp knife, cut each puff pastry sheet into 2-inch squares. You should have about 24 squares per sheet.

Place the squares onto the prepared baking sheets, leaving space between each piece.
