Preheat your oven to 375Β°F (190Β°C).
Prepare the apples by peeling, coring, and halving them. Set aside.
In a 10-inch cast iron skillet, melt the butter over medium heat. Once melted, sprinkle the granulated sugar evenly over the butter.
Cook the butter and sugar mixture without stirring until it turns a deep amber caramel, approximately 8β10 minutes. Swirl the pan gently as needed to ensure even cooking.
Remove the skillet from heat and stir in the vanilla extract.
Carefully place the apple halves, cut side up, into the caramel in a circular pattern. Fit as many as possible, keeping them snug.
Roll out the puff pastry on a lightly floured surface to smooth it out and ensure even thickness. Cut it into a circle slightly larger than the skillet.
Drape the pastry over the apples and tuck the edges down around the sides of the skillet.
Using a sharp knife, make a few small slits in the pastry to allow steam to escape.
Place the skillet in the preheated oven and bake for 25β30 minutes, or until the pastry is golden and puffed.
Remove the skillet from the oven and allow the tart to cool for 5 minutes.
Carefully invert the tart onto a serving plate. To do this, place the plate over the skillet and quickly but carefully flip them together.
Slice and serve warm, optionally with a scoop of vanilla ice cream or a dollop of whipped cream.
