Preheat your oven to 300°F (150°C).
In a small bowl, combine the salt, black pepper, garlic powder, onion powder, paprika, and cumin.
Rub the pork shoulder all over with olive oil, then evenly coat with the spice mixture.
Place the pork shoulder in a roasting pan and roast in the oven for approximately 4 hours, or until the internal temperature reaches 195°F (90°C).
While the pork is roasting, prepare the coleslaw by combining mayonnaise, apple cider vinegar, and sugar in a large bowl.
Mix in the coleslaw mix until well coated and place in the refrigerator until ready to use.
Once the pork is cooked, remove from the oven and let it rest for at least 30 minutes.
Shred the pork using two forks, discarding any excess fat.
Slice open the sandwich rolls and butter them lightly on the inside.
Toast the rolls on a skillet or in an oven until golden brown.
Assemble the sandwich by layering shredded pork on the bottom half of the roll, optionally drizzle some cooking juices, and top with coleslaw.
Place the top half of the roll over the filled bottom and serve immediately.
