In a large mixing bowl, cream the unsalted butter and 100 grams of the granulated sugar until light and fluffy. Add in the vanilla extract and mix until combined.
In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
Gradually add the dry ingredients to the butter mixture, mixing just until combined. The dough should come together into a soft ball.
Split the dough into two equal portions. Flatten each into a disc, wrap in plastic wrap, and refrigerate for 1 hour or until firm.
In the meantime, mix the remaining granulated sugar (100 grams), ground cinnamon, and brown sugar in a small bowl to create the cinnamon-sugar filling.
Once the dough is chilled, roll out one portion on a floured surface into a rectangle approximately 1/4-inch thick.
