📝 Instructions

12 steps
1

In a large mixing bowl, cream the unsalted butter and 100 grams of the granulated sugar until light and fluffy. Add in the vanilla extract and mix until combined.

2

In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.

3

Gradually add the dry ingredients to the butter mixture, mixing just until combined. The dough should come together into a soft ball.

4

Split the dough into two equal portions. Flatten each into a disc, wrap in plastic wrap, and refrigerate for 1 hour or until firm.

5

In the meantime, mix the remaining granulated sugar (100 grams), ground cinnamon, and brown sugar in a small bowl to create the cinnamon-sugar filling.

6

Once the dough is chilled, roll out one portion on a floured surface into a rectangle approximately 1/4-inch thick.

7

Brush the rolled-out dough lightly with milk to help the filling stick, then evenly sprinkle half of the cinnamon-sugar mixture over the surface.

8

Starting from one long edge, tightly roll the dough into a log, sealing the seam with a little milk. Wrap the log in plastic wrap and refrigerate for another 30 minutes. Repeat with the second portion of dough.

9

Preheat your oven to 180°C (350°F) and line two baking sheets with parchment paper.

10

Using a sharp knife, slice each log into 1/4-inch thick pinwheels and place them on the prepared baking sheets about 1 inch apart.

11

Bake the cookies for 10-12 minutes, or until the edges are golden brown. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

12

Serve your cinnamon sugar pinwheel cookies with a warm cup of tea or coffee and enjoy!
