📝 Instructions

13 steps
1

Preheat your oven to 175°C (350°F) and grease an 8-inch square baking pan. Line it with parchment paper for easy removal.

2

In a double boiler, melt the 200 grams of dark chocolate and unsalted butter together over low heat, stirring until smooth. Remove from heat and let it cool slightly.

3

In a mixing bowl, whisk the granulated sugar and eggs until they become pale and frothy, about 2-3 minutes.

4

Gradually fold the melted chocolate mixture into the egg mixture, ensuring everything is fully incorporated.

5

Sift the all-purpose flour, cocoa powder, and instant coffee powder into the wet mixture. Gently fold until no streaks remain.

6

Pour the batter into the prepared baking pan and spread it evenly with a spatula. Bake for 20-25 minutes, or until the center is just set and a toothpick inserted comes out with a few moist crumbs.

7

Remove the pan from the oven and allow the cake to cool in the pan for 10 minutes. Then lift it out using the parchment paper and cool completely on a wire rack.

8

While the cake cools, prepare the ganache. Heat the heavy cream in a saucepan over medium heat until it just begins to simmer. Do not boil.

9

Pour the hot cream over the 100 grams of dark chocolate (chopped, if in bars) in a heatproof bowl. Let sit for 1 minute, then stir until completely smooth.

10

Once the cake is cool, spread the ganache evenly over the top using an offset spatula.

11

Drizzle the caramel sauce over the ganache in zig-zag patterns and sprinkle the sea salt flakes over the top for a salty-sweet finish.

12

Refrigerate for at least 1 hour to allow the ganache to set.

13

Before serving, lightly dust powdered sugar over the top for garnish (optional). Slice into squares and enjoy!
