In a heatproof bowl, melt the semi-sweet chocolate and unsalted butter over a pot of simmering water (double boiler method). Stir until smooth, then remove from heat and let it cool slightly.

In a separate bowl, whisk together the egg yolks and granulated sugar until pale and creamy. Gradually mix in the melted chocolate and vanilla extract until fully combined.

In a clean bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the chocolate mixture in three batches, being careful not to deflate the mixture.

In another bowl, whip the heavy cream until soft peaks form. Fold the whipped cream into the chocolate mixture until smooth. Set aside this chocolate mousse.

Prepare the ladyfingers by quickly dipping them one at a time into the coffee or hot chocolate. Do not soak them for too long to prevent them from falling apart.

Line the bottom and sides of a 9-inch springform pan or charlotte mold with the dipped ladyfingers, sugar side facing outwards for the side layer.

Pour half of the chocolate mousse into the pan, smoothing the surface with a spatula. Add another layer of dipped ladyfingers on top of the mousse, and then pour over the remaining mousse.

Cover the pan with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to set.

Before serving, carefully remove the springform ring or mold. Dust the top of the charlotte with cocoa powder and garnish with dark chocolate shavings.
