Ingredients

  • 3 whole peppers Chipotle peppers in adobo sauce
  • 2 tablespoons Adobo sauce (from the same can as the chipotles)
  • 1 cup Ketchup
  • 2 tablespoons Apple cider vinegar
  • 1 tablespoon Brown sugar
  • 2 tablespoons Honey
  • 1 tablespoon Worcestershire sauce
  • 2 cloves Garlic cloves, minced
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Ground cumin
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.25 cup Water (as needed)

Directions

Step 1

Roughly chop the chipotle peppers, ensuring you do not remove too much of the seeds unless you desire less heat.

Step 2

In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Step 3

Stir in the ketchup, apple cider vinegar, brown sugar, honey, Worcestershire sauce, smoked paprika, ground cumin, and salt.

Step 4

Add the chopped chipotle peppers and adobo sauce to the mixture. Stir well to combine.

Step 5

Simmer the sauce on low heat for 10 to 15 minutes, stirring occasionally. Add water a tablespoon at a time during cooking if the sauce becomes too thick.

Step 6

Carefully taste and adjust seasoning as needed, adding more honey for sweetness or more vinegar for tanginess.

Step 7

Once the sauce has thickened to the desired consistency, remove from heat and let cool slightly.

Step 8

If a smoother consistency is preferred, use an immersion blender or transfer the sauce to a blender and process until smooth.

Step 9

Let the sauce cool completely before transferring it to an airtight container. Store in the refrigerator for up to 2 weeks.

Step 10

Use as a marinade, baste for grilling, or a dipping sauce for meats, vegetables, or sandwiches.
