Clean the squid tubes by rinsing them under cold water. Pat them dry with a paper towel, then slice them into rings about 1 cm thick or into strips if preferred.
In a large bowl, mix the cornflour, plain flour, sea salt, black pepper, and white pepper.
Toss the squid rings in the flour mixture to ensure they are evenly coated. Shake off any excess flour and set aside on a plate.
In a deep frying pan or wok, heat the vegetable oil to 180Β°C (350Β°F). If you donβt have a thermometer, test the oil by dropping in a small cube of breadβit should sizzle and turn golden brown in about 30 seconds.
Fry the squid in small batches to avoid overcrowding. Use a slotted spoon to gently add the squid to the hot oil and fry for 2β3 minutes or until golden and crispy. Remove the squid and drain on a plate lined with paper towels.
In a separate large frying pan, heat 1 tablespoon of vegetable oil over medium heat. Add the minced garlic, sliced chilli, and spring onions. Stir-fry for 1β2 minutes until fragrant.
Toss the fried squid into the pan with the garlic, chilli, and spring onions. Stir well to coat the squid with the aromatics.
Serve immediately on a platter with lemon wedges on the side for squeezing over the squid. Enjoy your Chilli Salt and Pepper Squid!
