πŸ“ Instructions

8 steps
1

Clean the squid tubes by rinsing them under cold water. Pat them dry with a paper towel, then slice them into rings about 1 cm thick or into strips if preferred.

2

In a large bowl, mix the cornflour, plain flour, sea salt, black pepper, and white pepper.

3

Toss the squid rings in the flour mixture to ensure they are evenly coated. Shake off any excess flour and set aside on a plate.

4

In a deep frying pan or wok, heat the vegetable oil to 180Β°C (350Β°F). If you don’t have a thermometer, test the oil by dropping in a small cube of breadβ€”it should sizzle and turn golden brown in about 30 seconds.

5

Fry the squid in small batches to avoid overcrowding. Use a slotted spoon to gently add the squid to the hot oil and fry for 2–3 minutes or until golden and crispy. Remove the squid and drain on a plate lined with paper towels.

6

In a separate large frying pan, heat 1 tablespoon of vegetable oil over medium heat. Add the minced garlic, sliced chilli, and spring onions. Stir-fry for 1–2 minutes until fragrant.

7

Toss the fried squid into the pan with the garlic, chilli, and spring onions. Stir well to coat the squid with the aromatics.

8

Serve immediately on a platter with lemon wedges on the side for squeezing over the squid. Enjoy your Chilli Salt and Pepper Squid!
