Slice the chicken thighs into thin strips and place them in a bowl.

In a small bowl, mix 2 tablespoons soy sauce, 1 tablespoon oyster sauce, and cornstarch, then pour it over the chicken. Toss to coat and let it marinate for 10–15 minutes.

While the chicken marinates, chop the garlic, grate the ginger, julienne the carrot and bell pepper, and thinly slice the green onions. Set aside.

In a small bowl, whisk together the remaining soy sauce, oyster sauce, hoisin sauce, sesame oil, and chili paste (if using). Set the sauce aside.

Add the cooked noodles, green onions, and bean sprouts to the pan. Return the chicken to the pan as well.

Pour the sauce over the noodles and toss everything together until evenly coated. Cook for another 2–3 minutes, allowing the flavors to meld.
