Preheat your oven to 375°F (190°C).
Slice the tops off the green bell peppers and remove the seeds and membranes. Set the peppers aside and dice the tops to include in the filling.
Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the diced onion and sauté until softened, about 3-4 minutes.
Add the diced bell pepper tops and minced garlic to the skillet and sauté for an additional 2 minutes.
