Preheat a grill pan or panini press to medium-high heat.

Season the chicken breasts with salt, black pepper, and paprika on both sides.

Heat the olive oil in a skillet over medium heat. Cook the chicken breasts for 5-6 minutes per side, or until completely cooked through and the internal temperature reaches 165Β°F (74Β°C). Let the chicken rest for 5 minutes, then slice into thin strips.

Cut the panini bread in half and spread a thin layer of the Dijon mayonnaise mixture on the inside of each half.
