Slice the chicken breasts into thin strips and set aside.
In a small bowl, combine soy sauce, oyster sauce, cornstarch, chicken broth, sugar, salt, and black pepper. Stir well to make the sauce and set it aside.
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
Add the chicken strips to the skillet and cook for 4-5 minutes until they are golden brown and fully cooked. Remove the chicken from the skillet and set aside.
In the same skillet, add another tablespoon of vegetable oil. Add the minced ginger and garlic, and sauté for 30 seconds until fragrant.
Add broccoli florets and 120 ml of water to the skillet. Cover and steam for 3-4 minutes until the broccoli is tender but still crisp.
Return the cooked chicken to the skillet and pour in the prepared sauce.
Stir everything together and cook for another 2-3 minutes until the sauce thickens and evenly coats the chicken and broccoli.
Remove from heat and serve hot. Optionally, serve over steamed rice or noodles.
