Cut the chicken breast into thin strips and season with salt and pepper.
Wash the asparagus and trim off the woody ends. Cut the asparagus into 2-inch pieces.
Peel and finely grate the ginger. Mince the garlic cloves.
In a small bowl, whisk together the soy sauce, oyster sauce, honey, cornstarch, and water to create the ginger sauce. Set aside.
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
Add the chicken strips to the skillet and stir-fry for 4-5 minutes, until the chicken is browned and cooked through. Remove the chicken from the pan and set aside.
Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the asparagus pieces and stir-fry for 3-4 minutes, until they are bright green and tender-crisp.
Return the cooked chicken to the skillet with the asparagus. Add the minced garlic and grated ginger, and stir-fry for 1 minute until fragrant.
Pour the ginger sauce over the chicken and asparagus. Cook for another 2-3 minutes, stirring frequently, until the sauce thickens and evenly coats the chicken and vegetables.
Remove from heat and serve the stir fry immediately over steamed rice or noodles.
