1. In a medium saucepan over medium heat, combine the heavy cream, whole milk, and salt. Stir occasionally and heat until the mixture is just about to simmer. Do not let it boil.

2. While the cream mixture heats, in a separate bowl, whisk the egg yolks and granulated sugar until pale and thick, about 2–3 minutes.

3. Once the cream mixture is warm, slowly pour about 1/2 cup of it into the egg yolk mixture while whisking constantly to temper the eggs.

4. Gradually add the tempered egg mixture back into the saucepan with the remaining warm cream, whisking constantly.

5. Reduce the heat to low and cook, stirring constantly with a wooden spoon, until the mixture thickens enough to coat the back of the spoon. This will take about 5–7 minutes. Do not let it boil.

6. Remove the saucepan from the heat and stir in the vanilla extract. Strain the custard through a fine-mesh sieve into a clean bowl to remove any cooked egg bits, and let it cool to room temperature.

7. While the custard cools, prepare the cherries. If using fresh cherries, pit them and chop them into small pieces. If using frozen cherries, thaw and chop them. Set aside.

8. Once the custard has cooled, cover it with plastic wrap, pressing the wrap directly onto the surface to prevent a skin from forming. Refrigerate for at least 4 hours or overnight until fully chilled.

9. Once chilled, churn the custard in an ice cream maker according to the manufacturer's instructions. During the last 5 minutes of churning, add the chopped cherries and dark chocolate pieces to the mixture.

10. Transfer the churned ice cream to an airtight container and freeze for at least 2 hours to firm up before serving.
