Indulge in the tropical delight of Chendol, a beloved Southeast Asian dessert thatβs as vibrant in flavor as it is in presentation. Highlighting fragrant pandan-infused green noodles, silky coconut milk, and rich palm sugar syrup, this cooling treat is a perfect blend of sweetness and creaminess. Enhanced with a splash of salt for balance and optional tender red beans for texture, Chendol is an irresistible marriage of traditional ingredients. Served over a bed of ice, this refreshingly chilled dessert is ideal for hot days and a treat for the senses. With its intriguing combination of textures and flavors, Chendol is not only easy to make in under an hour but is a stunning way to showcase authentic Southeast Asian cuisine.
To make the pandan noodles, mix green pea flour, pandan extract, and 500 milliliters of water in a saucepan over medium heat. Stir continuously until it thickens and the color turns semi-clear.
Carefully prepare a bowl filled with ice water. Using a cendol mold or a colander with large holes, press the hot pandan dough through into the ice water to form noodles. Allow them to firm up while submerged in the cold water.
For the palm sugar syrup, combine palm sugar and 100 milliliters of water in a saucepan. Cook over medium heat until it dissolves completely and forms a syrup. Strain to remove any impurities and set aside.
In another saucepan, heat the coconut milk gently, adding a pinch of salt. Stir gently until just warm and well combined. Do not allow the coconut milk to boil. Remove from heat and allow it to cool.
If adding red beans, cook them until soft and set aside.
To assemble the chendol, divide the pandan noodles into serving bowls. Layer with the optional red beans.
Pour the cooled coconut milk over the noodles and beans, followed by a generous drizzle of palm sugar syrup.
Top with a handful of ice cubes to chill the dessert before serving.
Enjoy your refreshing bowl of chendol, a perfect combination of textures and flavors.
