To make the pandan noodles, mix green pea flour, pandan extract, and 500 milliliters of water in a saucepan over medium heat. Stir continuously until it thickens and the color turns semi-clear.

Carefully prepare a bowl filled with ice water. Using a cendol mold or a colander with large holes, press the hot pandan dough through into the ice water to form noodles. Allow them to firm up while submerged in the cold water.

For the palm sugar syrup, combine palm sugar and 100 milliliters of water in a saucepan. Cook over medium heat until it dissolves completely and forms a syrup. Strain to remove any impurities and set aside.

In another saucepan, heat the coconut milk gently, adding a pinch of salt. Stir gently until just warm and well combined. Do not allow the coconut milk to boil. Remove from heat and allow it to cool.

If adding red beans, cook them until soft and set aside.
