📝 Instructions

11 steps
1

Wash the Swiss chard thoroughly and remove the thick stems. Chop the leaves and thinly slice the stems, keeping them separate.

2

Peel and thinly slice the onion. Mince the garlic cloves.

3

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the onion and Swiss chard stems. Cook, stirring occasionally, until they are soft and slightly caramelized, about 8 minutes.

4

Add the chopped Swiss chard leaves and minced garlic to the skillet. Cook for another 5 minutes, or until the leaves are wilted and the garlic is fragrant. Remove from heat and let cool slightly.

5

In a large mixing bowl, whisk together the eggs, parsley, thyme, salt, pepper, and grated Parmesan cheese until well combined.

6

Add the cooked chard and onion mixture to the whisked eggs. Stir until evenly incorporated.

7

Heat the remaining 1 tablespoon of olive oil in a large, nonstick, oven-safe skillet over medium heat. Pour in the egg and chard mixture and spread it evenly in the skillet.

8

Lower the heat to medium-low and cook without stirring for 8-10 minutes, or until the edges are set but the center is still slightly runny.

9

Preheat the broiler to high. Place the skillet under the broiler for 2-3 minutes, or until the top of the omelet is golden and fully set. Keep an eye on it to prevent burning.

10

Remove the skillet from the broiler and let the omelet cool for 2-3 minutes. Loosen the edges with a spatula and carefully slide the omelet onto a serving plate.

11

Slice into wedges and serve warm or at room temperature. Enjoy!
