Ingredients

  • 2.5 cups All-purpose flour
  • 2 cups Granulated sugar
  • 2.5 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 0.5 cups Unsalted butter (softened)
  • 4 Eggs
  • 2 teaspoons Vanilla extract
  • 1 cups Whole milk
  • 2 cups Heavy cream
  • 0.5 cups Powdered sugar
  • 3 tablespoons Cornstarch
  • 4 Egg yolks
  • 2 cups Whole milk (for custard)
  • 0.5 cups Granulated sugar (for custard)
  • 1 teaspoon Vanilla extract (for custard)
  • 0 Optional: Candied fruit or chocolate shavings (for decoration)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, then set them aside.

Step 2

In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Add the softened butter, eggs, vanilla extract, and milk. Beat the mixture with an electric mixer on low speed until just combined, then increase to medium speed and beat for 2-3 minutes until smooth.

Step 3

Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula and bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.

Step 4

While the cake cools, prepare the custard filling. In a medium saucepan, whisk the egg yolks, cornstarch, sugar, and milk together until smooth. Heat over medium heat, stirring constantly, until the custard thickens (approximately 7-10 minutes). Remove from heat and stir in the vanilla extract. Let the custard cool completely.

Step 5

To make the whipped cream frosting, whip the heavy cream and powdered sugar together in a chilled bowl with an electric mixer on high speed until stiff peaks form.

Step 6

Once the cakes have cooled completely, level the tops of the cakes with a serrated knife if needed. Spread an even layer of custard filling over one cake layer, then place the second layer on top.

Step 7

Frost the top and sides of the entire cake with the whipped cream frosting. Smooth it out with an offset spatula.

Step 8

For optional decoration, add candied fruit pieces or sprinkle chocolate shavings evenly over the top of the cake.

Step 9

Chill the assembled cake in the refrigerator for at least 2 hours before serving to allow the flavors to meld and the cake to set.

Step 10

Slice, serve, and enjoy this creamy and indulgent Cassada Cake!
