📝 Instructions

10 steps
1

Peel the carrots and slice them into even-sized rounds, about 1 cm thick.

2

Bring a medium pot of water to a boil, then add a pinch of salt and the sliced carrots. Cook for 20-25 minutes or until the carrots are very tender and easily pierced with a fork.

3

While the carrots are cooking, peel and mince the garlic cloves.

4

Heat 1 tbsp of olive oil in a small skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, but be careful not to burn it.

5

Drain the cooked carrots and transfer them to a blender or food processor while still warm.

6

Add the sautéed garlic, harissa paste, lemon juice, ground cumin, ground coriander, salt, the remaining 1 tbsp of olive oil, and water to the blender.

7

Blend or process the ingredients until smooth and creamy. If the puree is too thick, add a small amount of additional water, 1 tbsp at a time, until your desired consistency is achieved.

8

Taste and adjust seasoning as needed, adding more salt or lemon juice for brightness.

9

Transfer the carrot and harissa puree to a serving bowl and drizzle with a little olive oil for garnish, if desired.

10

Serve warm or at room temperature as a side dish, dip, or spread.
