Preheat your oven to 400°F (200°C).
Slice the top off the garlic bulb to expose the cloves. Drizzle with 1 tablespoon of olive oil, wrap in foil, and roast in the oven for 30-35 minutes until the cloves are soft and golden brown.
While the garlic is roasting, peel and thinly slice the onions.
In a large pot or Dutch oven, heat the remaining 2 tablespoons of olive oil and the butter over medium heat.
