Bring a large pot of salted water to a boil. Cook the penne pasta according to the package instructions. Drain and set aside.
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced andouille sausage and cook for 3-4 minutes until browned. Remove from the skillet and set aside.
