Bring a large pot of salted water to a boil. While waiting, prepare the broccoli rabe by trimming the tough ends and cutting the rest into 2-inch pieces.
In a skillet, heat 2 tablespoons of olive oil over medium heat. Slice the vegetarian sausage into rounds and cook them for 4-5 minutes per side, or until browned. Remove and set aside.
Cook the pasta in the boiling water according to the package instructions until al dente. Reserve 1 cup of the pasta cooking water before draining.
Meanwhile, in the same skillet used for the sausage, add the remaining 1 tablespoon of olive oil. Add minced garlic and red pepper flakes, cooking for 30 seconds to 1 minute, until fragrant.
Add the broccoli rabe to the skillet, along with salt and black pepper. Sauté for 4-5 minutes, or until tender and slightly wilted.
Reduce the heat to low and stir in the cooked pasta and vegetarian sausage. Gradually add the reserved pasta cooking water, a little at a time, tossing to create a light sauce.
Taste and adjust seasoning with additional salt or pepper, if needed. Serve immediately, topped with grated Parmesan cheese if desired.
