Ingredients

  • 1 loaf Baguette or artisan bread
  • 4 tablespoons Olive oil
  • 2 cloves Garlic
  • 1 cup Cherry tomatoes
  • 6 leaves Fresh basil leaves
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 large Avocado
  • 1 teaspoon Lemon juice
  • 4 whole Eggs
  • 0.25 teaspoon Red pepper flakes (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Slice the baguette or artisan bread into 8 equal slices, each about 3/4 inch thick. Arrange them on a baking sheet.

Step 3

Brush both sides of the bread slices with 2 tablespoons of olive oil. Toast in the preheated oven for 5-7 minutes, flipping halfway, until golden and crisp.

Step 4

While the bread is toasting, finely chop the cherry tomatoes and basil leaves. Mince the garlic cloves.

Step 5

In a small bowl, combine the chopped tomatoes, basil, 1 tablespoon of olive oil, half of the minced garlic, salt, and black pepper. Mix well and set aside.

In another bowl, mash the avocado with a fork and mix in the lemon juice, remaining garlic, and a pinch of salt. Set aside.
