Ingredients

  • 16 oz fresh spinach
  • 2 tbsp unsalted butter
  • 1 medium shallot
  • 2 large garlic cloves
  • 2 tbsp all-purpose flour
  • 1.5 cups milk
  • 0.5 cups heavy cream
  • 5.2 oz Boursin cheese (Garlic & Fine Herbs flavor)
  • 0.5 cups Parmesan cheese, grated
  • 0.25 cups breadcrumbs
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.125 tsp nutmeg (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Bring a large pot of water to a boil and add a generous pinch of salt. Add the spinach and blanch for 1-2 minutes until just wilted. Drain the spinach and transfer immediately to a bowl of ice water to stop the cooking. Once cool, squeeze out as much water as possible and roughly chop. Set aside.

In a large skillet, melt the butter over medium heat. Add the finely diced shallot and cook until translucent, about 2 minutes. Add the minced garlic and cook for another 30 seconds until fragrant.

Sprinkle the flour over the shallot and garlic mixture and stir to form a roux. Cook for 1-2 minutes, stirring constantly, to remove the raw flour taste.

Gradually whisk in the milk and heavy cream, ensuring no lumps form. Continue to cook, stirring frequently, until the mixture thickens, about 3-4 minutes.
