Preheat your oven to 375°F (190°C).

Bring a large pot of water to a boil and add a generous pinch of salt. Add the spinach and blanch for 1-2 minutes until just wilted. Drain the spinach and transfer immediately to a bowl of ice water to stop the cooking. Once cool, squeeze out as much water as possible and roughly chop. Set aside.

In a large skillet, melt the butter over medium heat. Add the finely diced shallot and cook until translucent, about 2 minutes. Add the minced garlic and cook for another 30 seconds until fragrant.
