📝 Instructions

11 steps
1

Bring a large pot of salted water to a boil. Add the pasta shells and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the rest and set the pasta aside.

2

While the pasta cooks, clean and slice the portabella mushrooms into thin strips. Finely mince the shallot and garlic.

3

In a large skillet, heat the butter and olive oil over medium heat. Add the sliced mushrooms and sauté for 5-7 minutes, stirring occasionally, until they are golden brown and tender. Remove the mushrooms from the skillet and set them aside.

4

In the same skillet, add the minced shallot and garlic. Sauté for 1-2 minutes, stirring constantly, until fragrant and softened.

5

Reduce the heat to low and stir in the Boursin cheese and heavy cream. Whisk continuously until the cheese is fully melted and forms a smooth sauce.

6

Add the grated Parmesan cheese to the sauce and stir until it is well incorporated. If the sauce is too thick, gradually add the reserved pasta water, 1 tablespoon at a time, until the desired consistency is reached.

7

Season the sauce with salt and black pepper to taste.

8

Return the sautéed mushrooms to the skillet and gently fold them into the sauce.

9

Add the cooked pasta shells to the skillet, tossing gently to coat the pasta evenly in the sauce.

10

Remove the skillet from heat and garnish the dish with freshly chopped parsley.

11

Serve immediately and enjoy your creamy Pasta Shells with Portabella Mushrooms and Boursin Sauce!
