Ingredients

  • 1 cup Rolled oats
  • 1 cup All-purpose flour
  • 2 teaspoons Baking powder
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Salt
  • 0.5 cup Brown sugar
  • 0.25 cup Unsalted butter, melted
  • 2 large Eggs
  • 0.5 cup Milk
  • 1 teaspoon Vanilla extract
  • 1 cup Grated carrot
  • 1 cup Chopped apple
  • 0.5 cup Chopped walnuts or pecans
  • 0.5 cup Raisins (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a 12-count muffin tin with paper liners or grease the tin well with butter or cooking spray.

Step 2

In a large mixing bowl, combine the rolled oats, all-purpose flour, baking powder, ground cinnamon, salt, and brown sugar. Stir to mix evenly.

Step 3

In a separate medium bowl, whisk together the melted butter, eggs, milk, and vanilla extract until smooth.

Step 4

Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Avoid overmixing to ensure soft muffins.

Step 5

Fold in the grated carrot, chopped apple, walnuts or pecans, and raisins (if using). Mix until distributed evenly throughout the batter.

Step 6

Divide the batter evenly among the muffin cups, filling each about 3/4 full to allow room for rising.

Step 7

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Remove the muffins from the oven and let them cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely.

Step 9

Serve warm or at room temperature. Enjoy these muffins as a convenient, nutritious breakfast or snack!
