Wash and dry the bok choy. Slice each head lengthwise into quarters.
Peel and dice the potatoes into 1/2-inch cubes.
Peel and thinly slice the onion.
Mince the garlic cloves.
Heat 1 tablespoon of olive oil in a large skillet over medium heat.
Add the potatoes and a pinch of salt, and cook for 10-12 minutes, stirring occasionally, until golden brown and fork-tender. Remove and set aside.
In the same skillet, add the remaining 1 tablespoon of olive oil and the butter. Let the butter melt.
Add the onion slices to the skillet and cook over medium heat for 5-7 minutes, stirring often, until they become soft and lightly caramelized.
Add the minced garlic and cook for 1 more minute, until fragrant.
Increase the heat to medium-high and add the bok choy, soy sauce, remaining salt, and black pepper. If desired, add the red chili flakes for a hint of heat. Cook for 3-4 minutes, stirring frequently, until the bok choy is tender and vibrant green.
Return the cooked potatoes to the skillet, gently tossing everything together to combine.
Taste and adjust seasoning as needed. Serve immediately as a side dish to your favorite meal.
