Take the steaks out of the refrigerator and let them come to room temperature for about 30 minutes before cooking. Pat them dry with paper towels to ensure a good sear.

Season both sides of the steaks with salt and black pepper.

In a heavy skillet or cast iron pan, heat the olive oil over medium-high heat until shimmering.

Add the steaks to the pan and sear for 3-5 minutes on the first side until a nice crust forms. Flip and cook for another 3-5 minutes on the other side (or longer depending on desired doneness).
