📝 Instructions

14 steps
1

Preheat your oven to 180°C (350°F). Grease and line the bottoms of two 8-inch (20 cm) round cake pans with parchment paper.

2

In a large mixing bowl, sift together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.

3

Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until the batter is smooth and fully incorporated.

4

Gradually add the boiling water to the batter, stirring constantly. The batter will be thin, but this is normal.

5

Divide the batter evenly between the prepared cake pans and bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

6

Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

7

While the cakes are cooling, drain the cherries, reserving 3 tablespoons of the syrup. Mix the reserved syrup with the Kirsch and set aside.

8

Chop the dark chocolate into small shavings using a sharp knife or a vegetable peeler, and set aside for decoration.

9

In a chilled bowl, whip the heavy cream with the powdered sugar until stiff peaks form. Keep the whipped cream refrigerated until ready to use.

10

Once the cakes are completely cool, level the tops with a serrated knife if necessary. Brush the top of each cake layer with the cherry syrup and Kirsch mixture to moisten.

11

Place one cake layer on a serving plate. Spread a layer of whipped cream on top, then scatter half of the cherries over the cream.

12

Place the second cake layer on top and spread whipped cream over the entire cake, covering the top and sides.

13

Press the chocolate shavings onto the sides of the cake and sprinkle some on top. Decorate the top with the remaining cherries and additional whipped cream if desired.

14

Chill the cake for at least 1 hour before serving to allow the flavors to meld together.
