📝 Instructions

9 steps
1

Finely mince the shallot and set aside.

2

Cut the unsalted butter into small cubes and place it in the refrigerator to keep it cold.

3

In a medium saucepan over medium heat, add the minced shallot and the beer.

4

Allow the beer and shallot to simmer gently until the liquid has reduced by half, which should take about 5–7 minutes.

5

Stir in the heavy cream and continue simmering for an additional 2 minutes until slightly thickened.

6

Reduce the heat to low and begin whisking in the cold butter, a few cubes at a time, until each addition is fully melted and emulsified. Continue until all of the butter has been incorporated. Make sure the sauce stays warm but does not simmer or boil, as this could cause it to separate.

7

Once the butter is fully incorporated, stir in the lemon juice, salt, and white pepper. Taste the sauce and adjust the seasoning if necessary.

8

Strain the sauce through a fine-mesh sieve if you prefer a smooth texture, discarding the shallot solids.

9

Serve the Beurre Bière immediately alongside your dish of choice, or keep it warm over very low heat until ready to serve.
