  • 1 pound Baby potatoes (halved)
  • 2 tablespoons Parsley (chopped, for garnish)

Preheat your oven to 325°F (165°C).

In a large bowl, combine the flour, salt, and black pepper. Toss the beef cubes in the flour mixture to coat evenly.

Heat 2 tablespoons of olive oil in a large oven-safe Dutch oven or casserole pot over medium-high heat. Add the beef in batches (to prevent overcrowding) and sear on all sides until browned. Remove the beef from the pot and set aside.

Add the baby potatoes to the pot and stir gently.

Cover the pot with a lid and transfer it to the preheated oven. Cook for 1.5 to 2 hours, or until the beef is tender and the flavors are well combined. Check occasionally and give it a stir to ensure nothing sticks to the bottom.

Once cooked, remove the pot from the oven. Discard the bay leaves, taste, and adjust seasoning with more salt or pepper if needed.
